Gluten-Free Seafood Laksa

Ingredients:

  • 2 cups gluten-free rice noodles
  • 1 can 14 oz coconut milk
  • 2 cups seafood broth
  • 1 tablespoon gluten-free red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1 cup mixed seafood shrimp, squid, mussels
  • 1 red bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions:

Prepare rice noodles according to package instructions, drain, and set aside

In a large pot, heat vegetable oil over medium heat

Add minced garlic, sliced onion, and sliced red bell pepper

Saut until softened, about 3-4 minutes

Stir in red curry paste and cook for another minute

Pour in coconut milk and seafood broth

Bring to a simmer

Add fish sauce, lime juice, and brown sugar

Stir to combine

Add mixed seafood and simmer for 5-7 minutes, or until seafood is cooked through

Divide cooked rice noodles into serving bowls

Ladle seafood laksa over noodles

Garnish with fresh cilantro leaves and serve with lime wedges
