Ingredients:
- 2 cups gluten-free rice noodles
- 1 can 14 oz coconut milk
- 2 cups seafood broth
- 1 tablespoon gluten-free red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
- 1 cup mixed seafood shrimp, squid, mussels
- 1 red bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Fresh cilantro leaves, for garnish
- Lime wedges, for serving
Instructions:
Prepare rice noodles according to package instructions, drain, and set aside
In a large pot, heat vegetable oil over medium heat
Add minced garlic, sliced onion, and sliced red bell pepper
Saut until softened, about 3-4 minutes
Stir in red curry paste and cook for another minute
Pour in coconut milk and seafood broth
