Paleo Honey Sweetened Jam



For people on the GAPS, Paleo, or SCD diets, this Paleo honey-sweetened jam is ideal. Using only natural ingredients and raw honey for sweetness, this jam is a healthier option than store-bought varieties.

Ingredients:

  • 4 cups fresh or frozen berries such as strawberries, raspberries, or blackberries
  • 1/4 cup raw honey
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chia seeds

Instructions:

Put the berries, raw honey, and fresh lemon juice in a medium-sized saucepan

Simmer on medium heat, stirring periodically, for 10 to 15 minutes, or until the berries soften and the mixture thickens

Take off the heat source and mix in the chia seeds

Give the mixture ten minutes to cool

Blend the mixture until it's smooth by transferring it to a blender or using an immersion blender

After sterilizing and pouring the jam into jars, allow it to cool to room temperature

The jam should be chilled after cooling

As it cools, it will get thicker still
