Ingredients:
- 3/4 cup granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 3 envelopes unflavored gelatin about 2
- 5 tbsp
- 1/2 cup peanut butter
- 1/4 cup powdered sugar
- 1/4 cup cornstarch
- 1/2 cup jelly or jam your choice of flavor
- 1/4 cup confectioners' sugar for dusting
Instructions:
In a saucepan, combine granulated sugar, corn syrup, and water
Cook over medium heat, stirring until the sugar dissolves
Insert a candy thermometer and heat to 240F 115C
While the sugar mixture is heating, in a separate bowl, sprinkle the gelatin over 1/4 cup of cold water
Let it sit for 5 minutes to bloom
Once the sugar mixture reaches 240F 115C, remove it from heat
Slowly pour it into the bloomed gelatin, stirring continuously until the gelatin dissolves completely
In a stand mixer with a whisk attachment, beat the sugar-gelatin mixture on high speed until it becomes thick and fluffy, about 10-12 minutes
In a microwave-safe bowl, microwave the peanut butter for 20-30 seconds until it's slightly softened
Fold the peanut butter into the marshmallow mixture until well combined
In a separate bowl, mix together the powdered sugar and cornstarch
Grease a 9x9-inch 23x23 cm baking dish and dust it with the powdered sugar and cornstarch mixture, leaving some for later
Pour half of the marshmallow mixture into the prepared dish and spread it evenly
Drop spoonfuls of jelly or jam onto the marshmallow mixture in the dish
Swirl it gently with a knife or skewer to create a marbled effect
Pour the remaining marshmallow mixture on top and spread it evenly over the jelly layer
Dust the top with the remaining powdered sugar and cornstarch mixture
Let the marshmallows set at room temperature for at least 4 hours or overnight
Once set, cut the marshmallows into squares or desired shapes and roll them in more powdered sugar to prevent sticking
