Egg White Scramble with Spinach and Cherry Tomatoes



This Egg White Scramble with Spinach and Cherry Tomatoes is a healthy and delicious breakfast option. It's low in calories and packed with protein and nutrients from the egg whites, spinach, and tomatoes. The Parmesan cheese adds a savory twist, and fresh basil leaves give it a burst of flavor.

Ingredients:

  • 6 egg whites
  • 1 cup fresh spinach leaves, chopped
  • 1/2 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese optional
  • Fresh basil leaves for garnish optional

Instructions:

Heat olive oil in a non-stick skillet over medium heat

Add the chopped spinach and cherry tomatoes to the skillet and saut for 2-3 minutes until the spinach wilts and the tomatoes start to soften

In a bowl, whisk the egg whites and season with salt and pepper to taste

Pour the whisked egg whites into the skillet with the spinach and tomatoes

Stir continuously, scrambling the eggs until they are fully cooked and no longer runny

If desired, sprinkle grated Parmesan cheese over the scrambled eggs and stir until it melts and combines with the eggs

Remove from heat and garnish with fresh basil leaves if using
