Ingredients:
- 1 lb ground beef
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup sugar-free ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 large eggs
- Optional: sugar-free barbecue sauce for topping
Instructions:
In a mixing bowl, combine ground beef, almond flour, grated Parmesan cheese, sugar-free ketchup, Worcestershire sauce, garlic powder, onion powder, dried thyme, salt, and pepper
Add eggs to the mixture and mix until well combined
Shape the mixture into a loaf and place it on a piece of aluminum foil
Create a sling with the aluminum foil to easily lift the meatloaf in and out of the pressure cooker
Pour 1 cup of water into the pressure cooker and place a trivet inside
Carefully lower the meatloaf onto the trivet using the aluminum foil sling
Close the lid and set the valve to sealing
Cook on high pressure for 25 minutes
Once done, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure
Carefully open the lid and remove the meatloaf using the aluminum foil sling
Optional: Brush sugar-free barbecue sauce over the top of the meatloaf for extra flavor
Slice and serve the meatloaf hot, and enjoy!
