Ingredients:
- 4 medium-sized potatoes, peeled and diced
- 1/4 cup extra-virgin olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, pitted and chopped
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley leaves, chopped
- Salt and pepper to taste
Instructions:
Boil the diced potatoes in a large pot of salted water until they are fork-tender, approximately 15-20 minutes
While the potatoes are cooking, heat the olive oil in a skillet over medium heat
Add the minced garlic and saut for about 1-2 minutes until fragrant
Stir in the sun-dried tomatoes and Kalamata olives, cooking for an additional 2-3 minutes
Once the potatoes are cooked, drain them and return them to the pot
Mash the potatoes with a potato masher or fork until they reach your desired consistency
Fold in the sauted garlic, sun-dried tomatoes, olives, fresh basil, and parsley
Mix well to combine
Season the mashed potatoes with salt and pepper to taste, adjusting as needed
Serve hot, garnished with extra basil leaves and a drizzle of olive oil if desired
