These Mojo Pork Cuban Sandwiches will take you to Cuba with their flavors. A tasty meal is made by putting soft slices of marinated pork, Swiss cheese, pickles, and mustard between two crispy sub rolls.
Ingredients:
- 2 pounds pork shoulder, thinly sliced
- 1 cup mojo marinade
- 4 sub rolls, split
- 8 slices Swiss cheese
- 1 cup dill pickle slices
- 1/2 cup yellow mustard
- 4 tablespoons mayonnaise
- 4 tablespoons butter, softened
Instructions:
Place pork slices in a shallow dish and pour mojo marinade over them
Cover and refrigerate for at least 4 hours or overnight
Preheat a grill or panini press over medium-high heat
Grill the marinated pork slices for 5-7 minutes on each side until fully cooked and slightly charred
Spread mustard on one side of each sub roll and mayonnaise on the other side
Layer Swiss cheese, grilled pork slices, and pickle slices on the bottom half of each sub roll
Top with the other half of the rolls
Spread softened butter on the outside of each sandwich
Place the sandwiches on the grill or panini press and cook for 3-5 minutes on each side until the bread is crispy and the cheese is melted
Slice the sandwiches diagonally and serve hot
