A refreshing and nutritious quinoa dish with the zesty flavors of cilantro and lime, combined with colorful vegetables and protein-rich black beans.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions:
Run cold water over the quinoa to clean it
Put the quinoa and water in a medium-sized saucepan
Bring to a boil, then turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is done and the water is dry
Warm up the olive oil in a big pan over medium-low heat
Put in corn, red onion, black beans, and red bell pepper
Make sure the vegetables are soft
Add the cooked quinoa and stir it in
Cook for another 5 minutes to let the flavors blend
Take it off the heat and add the lime juice, salt, pepper, and chopped cilantro
Add everything to the bowl and mix it well
