This Chicken Healthy Taco Salad is a tasty and healthy meal that is full of fresh flavors and ingredients. With the cilantro lime vinaigrette and grilled chicken, the salad has a zesty kick. It's great for a quick and filling lunch or dinner.
Ingredients:
- 2 chicken breasts, grilled and diced
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup black beans, drained and rinsed
- 1/4 cup corn kernels
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1/4 cup shredded cheddar cheese
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- Tortilla strips or chips, for garnish
Instructions:
Chop the romaine lettuce and put it in a large bowl
Add the cherry tomatoes, avocado, black beans, corn kernels, red onion, cilantro, and shredded cheddar cheese
Put the honey, ground cumin, salt, and pepper in a small bowl and mix the lime juice, olive oil, and pepper with a whisk
Add the cilantro lime vinaigrette to the salad and mix everything together
Put grilled chicken dices on top of the salad, and then add tortilla strips or chips on top of that
